Figure 1 shows the results of a viscosity measurement while simultaneously measuring the zeta potential of 5 V % TiO2 dispersion in water. The titration begins at about pH = 4 and ends at about pH = 8.5. It is seen that the dispersion viscosity never returns to its initial value even well beyond the i.e.p. of pH=6 of the titania sample.

In Figure 2 is shown the pH titration of a 5 W% oil in water emulsion stabilized with β- lactoglobulin at pH=7. The maximum viscosity is reached at the i.e.p. at about pH=5.2 and the viscosity does not return to its initial value even far below the i.e.p.
